Homemade Lemonade

Ingredients

  • 300g caster sugar
  • 300ml water
  • 2 strips of lemon zest (removed with a vegetable peeler)
  • 2 slices of root ginger (optional)
  • Juice of 6 lemons
  • 750ml mineral water (sparkling or still)
  • Sprig of mint - to serve
  • Lots of ice

Directions

  1. Put the sugar, water, lemon zest and ginger in a pan and bring to the boil.
  2. Cook until the sugar has dissolved and the syrup is clear. This should take about 5 minutes.
  3. Leave aside to let the sugar syrup mixture cool down.
  4. When the mixture has cooled down, sieve into a glass jug and add the lemon juice and mineral water.
  5. Stir well and taste. Add more lemon juice or sugar depending on your own personal preference.
  6. Add some fresh slices of lemon and ginger to the jug.
  7. Chill in the fridge before serving over plenty of ice and a sprig of mint.
