Easy Peasy Parkin


  • 285g/ 10oz Self Raising flour
  • 3-4 level tsp Ground Ginger
  • 1 level tsp Bicarbonate of Soda
  • A good pinch of Salt
  • 125g/ 4oz Oatmeal
  • 170g/ 6oz Caster Sugar
  • 125g/ 4oz Golden Syrup
  • 125g/ 4oz Black Treacle
  • 2 Eggs
  • 140g/ 5oz Lard/Margarine (70g/ 2½ oz of each or all margarine to make suitable for vegetarians)
  • 300ml/ ½ Pint of Water


  1. Preheat the oven to Gas Mark 4/ 180 degrees C.

  2. Measure out your margarine and/or lard.

  3. Warm the water in a sauce pan, you only want to heat it enough so that the fat will melt as if it is too warm it will cook the eggs when you add it to the mixture later.

  4. Take the warmed water off the hob and add lard/ margarine then stir using a wooden spoon until all fat has melted.

  5. Into a large mixing bowl add the flour, ground ginger, bicarbonate of soda, salt, oatmeal, sugar, golden syrup and treacle.

  6. Crack 2 eggs into the mixture then pour over the water/fat mixture ensuring it has cooled first.

  7. Beat all the ingredients together using a wooden spoon until they are all mixed in well, (approximately 3-4 minutes by hand is usually enough). The mixture will be quite runny and the oatmeal will mean that it won't be completely smooth.

  8. Line the bottom of two loaf tins with baking parchment and grease the sides of the tins to ensure they come out in one piece.

  9. Pour the mixture into the 2 tins.

  10. Put in the centre of the oven for approx 40 minutes. Check it is cooked through by inserting a skewer/knife into the centre of the loaf, if it comes out clean it is ready if not, leave a little longer re-checking every few minutes.

  11. Leave for 1 day to become sticky, alternatively it makes a great pudding served straight from the oven topped with custard!
